Description

A hearty and nutritious soup made with sweet potatoes, lentils, and vegetables.


Ingredients

  • 2 medium sweet potatoes (about 2 cups, diced)
  • 1 cup green or brown lentils (rinsed)
  • 2 medium carrots (about 1 cup, chopped)
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until fragrant (about 2 minutes).
  2. Add diced sweet potatoes and chopped carrots; sprinkle with salt. Sauté for about 5 minutes until slightly softened.
  3. Stir in rinsed lentils, cumin, thyme, and vegetable broth until everything is submerged.
  4. Bring to a gentle boil, reduce heat to low, cover, and simmer for 30-35 minutes or until lentils are tender.
  5. Taste and adjust seasoning as needed before serving.
