- 1/4 cup sugar
- 1/4 cup water
- 1.5 teaspoons peppermint extract (divided)
- 3 tablespoons powdered baking cocoa
- 3 tablespoons warm water
- 1/2 cup hot espresso
- 1.5 cups steamed milk
Instructions
- In a medium saucepan, combine the sugar and 1/4 cup water. Bring to a boil over medium heat, stirring occasionally to dissolve the sugar and prevent burning.
- Once boiling, reduce heat to low and let it simmer gently.
- When simmering stops, stir in half of the peppermint extract (1.5 teaspoons). Mix well and turn off the heat.
- In a small bowl, mix the powdered baking cocoa with 3 tablespoons of warm water until smooth, forming a thick paste.
- Add the hot espresso and the remaining peppermint extract (1.5 teaspoons) to the cocoa paste. Stir until fully combined.
- In a coffee mug, add the cocoa-espresso mixture, then 1 tablespoon of the prepared peppermint syrup, followed by 1.5 cups of steamed milk.
- Stir everything together. You can enjoy the mocha as is, or top with whipped cream and crushed candy canes for added festivity.
- If you prefer an iced peppermint mocha, allow the drink to cool slightly, then pour over ice and serve.
