Ingredients

  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut milk (or heavy cream)
  • 8 oz dark chocolate (chopped)
  • 1 tablespoon coconut oil (optional, for a smoother finish)

Instructions

  1. In a mixing bowl, combine the shredded coconut, softened cream cheese, powdered sugar, vanilla extract, and coconut milk. Mix until smooth and well combined.
  2. Using your hands, form the coconut mixture into dome shapes or balls. Place them on a baking sheet lined with parchment paper.
  3. Place the coconut domes in the freezer for about 30 minutes to firm up.
  4. In a heatproof bowl, melt the dark chocolate and coconut oil together over a pot of simmering water or in the microwave in 30-second intervals, stirring until smooth.
  5. Allow the melted chocolate to cool slightly before using.
  6. Dip each coconut dome into the melted chocolate, ensuring they are completely coated. Use a fork to lift them out.
  7. Place the chocolate-coated domes back onto the parchment-lined baking sheet.
  8. Refrigerate the chocolate-coated domes for about 30 minutes or until the chocolate has set.
  9. Optionally, drizzle with additional melted chocolate or sprinkle with extra shredded coconut before serving.
  10. Serve chilled and enjoy.
