Instructions
- Preheat your oven to 375 degrees F (190 degrees C) and grease 16 mini muffin cups to ensure the muffins don’t stick after baking.
- Combine the sugar, melted margarine, milk, baking powder, and all-purpose flour in a bowl. Mix until just combined; be careful not to overmix to keep the muffins tender.
- Spoon the batter into the prepared mini muffin cups, filling each about half full to allow room for rising during baking.
- Place the muffin tray in the preheated oven and bake for 10 to 15 minutes, or until the muffins are lightly golden on top and a toothpick inserted comes out clean.
- While the muffins bake, melt 1/4 cup margarine in a bowl. In a separate bowl, combine the sugar and ground cinnamon to create the cinnamon sugar mixture.
- Once the muffins are baked and slightly cooled to handle, remove them from their cups. Dip each muffin into the melted margarine, then roll it thoroughly in the cinnamon sugar mixture to coat.
- Allow the coated muffins to cool completely on a wire rack before serving to ensure the topping sets well.
