Ingredients

  • 1 packet Active dry yeast
  • 1.5 cups Warm water
  • 0.25 cups Granulated sugar
  • 4 cups Bob’s Red Mill Organic All-Purpose Flour
  • 1 teaspoon Salt
  • 0.25 cups Vegan butter (melted)
  • 0.5 cups Brown sugar
  • 2 tablespoons Cinnamon
  • 1 pinch Salt
  • 0.25 cups Cold vegan butter
  • 0.5 cups Unsweetened plant milk (for brushing)
  • 1 cup Water (combined with baking soda)
  • 0.5 cups Baking soda
  • 0.5 cups Organic powdered sugar
  • 1 teaspoon Splash vanilla extract

Instructions

  1. Combine ingredients: Add your yeast, warm water, and sugar to the bowl of your stand mixer. Mix with a wooden spoon, then let it sit for 5-10 minutes until it blooms and becomes frothy.
  2. Mix the dough: Add your flour, salt, and melted vegan butter. Using the hook attachment, mix at low speed, then increase to medium for about 5 minutes, until the dough pulls away from the sides and forms a ball.
  3. Let it rise: Lightly oil a large bowl, place the dough inside, and cover it with a damp towel. Allow it to rest for 1 hour, or until it has doubled in size.
  4. Prepare the topping: In a small bowl, combine the topping ingredients. Break down the cold vegan butter until well mixed. Set in the fridge until ready to use.
  5. Shape the pretzels: Once the dough has risen, transfer it to a lightly floured surface. Divide it into 8 equal pieces, stretch each piece to about 26 inches long, and twist them into a classic pretzel shape.
  6. Boil the pretzels: Line two baking sheets with parchment paper. In a medium pot, bring water and baking soda to a boil. Carefully boil each pretzel for 30 seconds, flipping them at the 15-second mark before placing them on the baking sheet.
  7. Preheat and glaze: Preheat your oven to 450 degrees F. Brush each pretzel with plant milk and generously top with the cinnamon sugar mixture, pressing down gently to adhere.
  8. Bake beautifully: Bake for 12-15 minutes until golden and puffed. Let cool on a rack for a few moments, then serve with the sweet glaze for dipping!
