Ingredients

  • 2 teaspoons cinnamon

  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup maple syrup (OR brown sugar)
  • 2 teaspoons pure vanilla extract
  • 2 cups chopped apple
  • 1/2 cup chopped pecans

Instructions

  1. In a large mixing bowl, combine the oats, cinnamon, baking powder, and salt. Stir these dry ingredients well. Add the milk, unsweetened applesauce, eggs, maple syrup, and vanilla extract. Stir thoroughly and fold in the chopped apples and pecans.
  2. Lightly grease a 9×13 inch baking dish. Pour the oat mixture into the dish and spread it out evenly.
  3. Cover the dish with plastic wrap or a clean towel and place it in the refrigerator overnight.
  4. The next morning, preheat your oven to 350°F (175°C). Bake the oatmeal for 35 to 40 minutes, or until set and golden brown. Let it rest for 5 to 10 minutes before slicing.
