Ingredients

  • 2 cups Oreo cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp red food coloring
  • 1 cup heavy cream
  • 1/4 cup Christmas sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Wrap a 9-inch springform pan with aluminum foil.
  2. Crush Oreo cookies finely, mix with melted butter and sugar, press into the pan, and bake for 8-10 minutes. Cool on a wire rack.
  3. In a mixer, beat cream cheese until smooth, add sugar, vanilla, cocoa powder, and food coloring. Whip heavy cream to soft peaks and fold in.
  4. Reduce oven to 325°F (160°C), place the pan in a larger roasting pan, pour hot water halfway up the sides, and bake for 1-1.5 hours.
  5. Turn off the oven and leave cheesecake inside for 1 hour, then cool completely and refrigerate for 6-8 hours.
  6. Remove the sides of the springform pan, top with whipped cream and sprinkles, and serve.

Notes

For a minty twist, add peppermint extract. Use gluten-free Oreos for a gluten-free version.
