Description

These Christmas Ornament Cupcakes are moist, chocolatey delights decorated to resemble festive holiday ornaments.


Ingredients

  • 1 1/3 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/4 cup Truvia® Sweet Complete™ All-Purpose Sweetener
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs
  • 1/3 cup sour cream
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, room temperature
  • 2 cups Truvia® Confectioners sweetener
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Food coloring (assorted colors for decorating)

Instructions

  1. Set your oven to 350°F (175°C).
  2. Sift together the all-purpose flour, cocoa powder, salt, baking powder, and baking soda.
  3. Beat 1/2 cup room temperature unsalted butter with 1 1/4 cup Truvia® Sweet Complete™ All-Purpose Sweetener until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract.
  5. Alternately add the dry ingredients and milk into the butter mixture, beginning and ending with dry ingredients. Mix in sour cream until smooth.
  6. Line a muffin tin with cupcake liners and fill each about two-thirds full with batter.
  7. Bake for 20 to 22 minutes, or until a toothpick comes out clean.
  8. Allow cupcakes to cool in the pan for 5 minutes before transferring to a wire rack.
  9. Beat 1 cup of room temperature unsalted butter until creamy. Gradually add 2 cups Truvia® Confectioners sweetener, vanilla extract, and salt until smooth.
  10. Mix frosting with food coloring to create various colors.
  11. Frost the cooled cupcakes to resemble Christmas ornaments using the colored buttercream.
