Description

Chocolate Caramel Tartlets are a delightful dessert featuring a rich chocolate tart shell, filled with creamy caramel and topped with smooth chocolate ganache.


Ingredients

  • For the Tart Shells:
    • 1 cup all-purpose flour
    • 1/4 cup unsweetened cocoa powder
    • 1/4 cup powdered sugar
    • 1/2 cup unsalted butter (chilled and cubed)
    • 1 large egg yolk
    • 12 tablespoons cold water
  • For the Caramel Filling:
    • 1 cup granulated sugar
    • 1/4 cup unsalted butter (cubed)
    • 1/2 cup heavy cream
    • 1 teaspoon sea salt (or to taste)
  • For the Chocolate Ganache:
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup heavy cream
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the all-purpose flour, cocoa powder, and powdered sugar.
  3. Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Stir in the egg yolk and add cold water, one tablespoon at a time, until the dough comes together.
  5. Press the dough into the wells of a tartlet pan, evenly covering the bottom and sides. Prick the bottoms with a fork to prevent bubbling.
  6. Bake in the preheated oven for 10-12 minutes or until set. Remove from the oven and let cool completely.
  7. In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a deep amber color.
  8. Once the sugar is melted, carefully add the cubed butter and stir until melted and combined.
  9. Slowly pour in the heavy cream while stirring (the mixture will bubble). Continue to stir until smooth. Remove from heat and stir in sea salt to taste.
  10. Pour the caramel filling into the cooled tartlet shells, filling them about three-quarters full.
  11. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  12. Remove from heat and add the chocolate chips, stirring until melted and smooth. Stir in the vanilla extract.
  13. Spoon the chocolate ganache over the caramel-filled tartlets, smoothing the top with a spatula.
  14. Refrigerate the tartlets for at least 1 hour to allow the ganache to set.
  15. Optionally, sprinkle with sea salt or top with chocolate shavings before serving.
