- For the Tart Shells:
- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter (chilled and cubed)
- 1 large egg yolk
- 1–2 tablespoons cold water
- For the Caramel Filling:
- 1 cup granulated sugar
- 1/4 cup unsalted butter (cubed)
- 1/2 cup heavy cream
- 1 teaspoon sea salt (or to taste)
- For the Chocolate Ganache:
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the all-purpose flour, cocoa powder, and powdered sugar.
- Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Stir in the egg yolk and add cold water, one tablespoon at a time, until the dough comes together.
- Press the dough into the wells of a tartlet pan, evenly covering the bottom and sides. Prick the bottoms with a fork to prevent bubbling.
- Bake in the preheated oven for 10-12 minutes or until set. Remove from the oven and let cool completely.
- In a medium saucepan over medium heat, melt the granulated sugar, stirring constantly until it turns a deep amber color.
- Once the sugar is melted, carefully add the cubed butter and stir until melted and combined.
- Slowly pour in the heavy cream while stirring (the mixture will bubble). Continue to stir until smooth. Remove from heat and stir in sea salt to taste.
- Pour the caramel filling into the cooled tartlet shells, filling them about three-quarters full.
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the chocolate chips, stirring until melted and smooth. Stir in the vanilla extract.
- Spoon the chocolate ganache over the caramel-filled tartlets, smoothing the top with a spatula.
- Refrigerate the tartlets for at least 1 hour to allow the ganache to set.
- Optionally, sprinkle with sea salt or top with chocolate shavings before serving.
