Delicious Chicken Scampi with Garlic Parmesan Rice
Ingredients

- 2 boneless, skinless chicken breasts
- 3 tablespoons unsalted butter
- 4 cloves fresh garlic, minced
- 2 tablespoons freshly squeezed lemon juice
- 2 cups low-sodium chicken broth
- 1 cup uncooked rice
- 2 cups chicken broth or vegetable broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, minced
- Salt and pepper to taste
Instructions
- Season your chicken breasts with salt and pepper. Heat a large skillet over medium heat and add 2 tablespoons of butter. Once melted, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of butter and toss in the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it. Pour in the chicken broth and lemon juice, and let it simmer for a couple of minutes.
- Add the cooked chicken back into the skillet, coating it in the sauce. Let it simmer for an additional 5 minutes to absorb the flavors.
- In a separate pot, melt 2 tablespoons of butter over medium heat. Add 1 cup of uncooked rice and toast it for about 2-3 minutes until slightly golden.
- Pour in 2 cups of chicken broth and bring it to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is done, remove it from heat and fluff it with a fork. Stir in the grated Parmesan cheese, minced parsley, and a pinch of salt and pepper.
- On a large plate, serve a scoop of garlic Parmesan rice topped with the chicken and a drizzle of the scampi sauce. Garnish with additional parsley and lemon wedges if desired.
