- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup all-purpose flour (for dredging)
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/2 cup fresh lemon juice (about 2 lemons)
- 1 cup chicken broth
- 1/4 cup capers, rinsed and drained
- Fresh parsley, chopped (for garnish)
Instructions
- Flatten the chicken breasts to even thickness using a meat mallet. Season the chicken with salt and pepper on both sides.
- Place the flour in a shallow dish. Coat each chicken breast lightly with flour, shaking off any excess.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil until hot but not smoking.
- Add the chicken to the pan, cooking for 3-4 minutes on each side until golden brown and cooked through. Transfer the chicken to a plate and cover to keep warm.
- In the same skillet, add the lemon juice, chicken broth, and capers. Use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the sauce simmer for about 5 minutes.
- Reduce heat and whisk in the remaining 2 tablespoons of butter until melted and the sauce looks glossy. Taste and adjust seasoning if necessary.
- Return the chicken to the skillet, coating it with the sauce. Cook for an additional minute before removing from heat.
