  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour (for dredging)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 cup chicken broth
  • 1/4 cup capers, rinsed and drained
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Flatten the chicken breasts to even thickness using a meat mallet. Season the chicken with salt and pepper on both sides.
  2. Place the flour in a shallow dish. Coat each chicken breast lightly with flour, shaking off any excess.
  3. In a large skillet over medium-high heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil until hot but not smoking.
  4. Add the chicken to the pan, cooking for 3-4 minutes on each side until golden brown and cooked through. Transfer the chicken to a plate and cover to keep warm.
  5. In the same skillet, add the lemon juice, chicken broth, and capers. Use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the sauce simmer for about 5 minutes.
  6. Reduce heat and whisk in the remaining 2 tablespoons of butter until melted and the sauce looks glossy. Taste and adjust seasoning if necessary.
  7. Return the chicken to the skillet, coating it with the sauce. Cook for an additional minute before removing from heat.
