A delicious and quick lo mein chicken stir-fry packed with vegetables and flavor.

- 2 boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 red bell pepper, julienned
- 1 cup shredded carrots
- 2 cups shredded cabbage
- 1/2 cup green onions, chopped
- 10 ounces lo mein noodles (or spaghetti)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon cornstarch (optional, for thickening)
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
Instructions
- Cook the noodles: Start by bringing a large pot of water to a boil. Cook the lo mein noodles according to the package instructions until al dente. Drain, rinse under cold water to stop the cooking process, and toss with a drizzle of sesame oil to prevent sticking.
- Prepare the sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, garlic, ginger, and cornstarch if using.
- Cook the chicken: Heat vegetable oil in a large wok or skillet over medium-high heat. Add the sliced chicken and stir-fry until golden brown and cooked through, about 4–5 minutes. Remove and set aside.
- Stir-fry the vegetables: In the same pan, add the bell pepper, cabbage, and carrots. Stir-fry for 3–4 minutes until just tender but still vibrant. Toss in the green onions at the end for a fresh bite.
- Combine everything: Return the chicken to the pan. Add the cooked noodles and pour in the sauce. Toss everything together over medium heat for 2–3 minutes.
- Serve hot: Serve immediately, garnished with extra green onions or a sprinkle of sesame seeds if desired.
