- 4 boneless, skinless chicken breasts
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 6 cups fresh spinach (washed and roughly chopped)
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley (optional, for garnish)
Instructions
- Season both sides of the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet and cook for 6–7 minutes per side, or until fully cooked and golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the butter and let it melt.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the spinach and cook for 2–3 minutes, until wilted.
- Pour in the heavy cream and stir to combine, bringing it to a gentle simmer.
- Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes if using.
- Cook for 2–3 minutes until the sauce slightly thickens.
- Return the chicken breasts to the skillet and spoon the sauce over them to coat evenly.
- Garnish with fresh parsley if desired.
- Serve hot with pasta, rice, or a fresh salad.
