Ingredients
Scale
- 1 head cauliflower, cut into florets
- 2 Tbsp olive oil
- 1/4 tsp salt
- Ground black pepper, to taste
- 4 cloves garlic, minced
- 4 oz cream cheese
- 1/2 cup plain Greek yogurt
- 1 1/2 cups grated Parmesan cheese, divided
- 1/2 cup shredded white cheddar cheese
- 1/4 cup green onions, chopped
- Pinch of red pepper flakes
Instructions
- Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the cauliflower.
- In a large bowl, toss cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a foil-lined baking sheet. Roast in the oven for 25 to 30 minutes, tossing halfway through, until cauliflower is tender and golden.

- Spoon the cauliflower mixture into a small baking dish or an 8-inch skillet. Sprinkle the remaining 1/2 cup Parmesan cheese evenly over the top. Bake for about 20 minutes until the top is golden and bubbly.
- Remove the dip from the oven, garnish with additional green onions, and serve warm with baguette slices, crackers, or fresh veggies. Enjoy your delicious, creamy Cheesy Roasted Cauliflower Dip!
