Cheddar-Stuffed Glazed Meatloaf is a juicy beef dish with a hidden molten cheddar center and a sticky tangy glaze, perfect for comfort food lovers.

- 2 lbs (900g) ground beef (80/20 ideal)
- 1 small onion, finely diced
- 2 cloves garlic, minced
- ¾ cup breadcrumbs
- ½ cup milk
- 2 eggs
- 2 tbsp Worcestershire sauce
- 2 tbsp ketchup
- 1 tbsp Dijon mustard
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp smoked paprika (optional)
- 2 tbsp fresh parsley, chopped
- 8–10 oz (225–280g) cheddar cheese, cut into thick sticks or a block
- ½ cup ketchup (for glaze)
- 2 tbsp brown sugar (for glaze)
- 1 tbsp apple cider vinegar (for glaze)
- 1 tbsp Worcestershire sauce (for glaze)
- ½ tsp garlic powder (for glaze)
- Fresh parsley (for garnish)
- Butter pats (for garnish)
Instructions
- In a bowl, mix breadcrumbs and milk. Let sit 3–4 minutes until softened.
- In a large bowl, combine ground beef, soaked breadcrumbs, onions, garlic, eggs, Worcestershire, ketchup, Dijon, seasonings, and parsley. Mix gently with your hands.
- On a parchment-lined baking sheet, flatten half of the beef mixture into a thick rectangle. Add a long mound of cheddar cheese in the center and place remaining beef mixture on top. Seal all edges well and shape into a smooth loaf.
- Whisk glaze ingredients together and brush ½ the glaze over the meatloaf.
- Preheat oven to 375°F (190°C) and bake meatloaf for 35 minutes. Brush with remaining glaze and bake another 20–25 minutes, or until internal temp reaches 160°F (71°C).
- Let rest for 10 minutes before slicing to reveal the gooey cheddar center.
