Ingredients

  • 4 slices of bacon
  • 2 cups beef broth
  • Cooking fat (tallow or bacon grease)
  • Optional spices: cumin, chili powder, cayenne
  • Shredded cheese and sour cream for topping

Instructions

  1. Cook bacon until crispy and reserve some fat.
  2. Preheat a Dutch oven over medium-high heat; add reserved fat.
  3. Sear sirloin chunks for 2-3 minutes on each side; set aside.
  4. Add ground beef and optional spices; cook until browned.
  5. Return sirloin to pot, add beef broth, bring to a boil, then simmer uncovered for 30 minutes.
  6. Crumble bacon into chili before serving, adjusting salt to taste.
