Description

Delicious bite-sized cannoli filled with creamy ricotta filling.


Ingredients

  • For the Pastry Shells:
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter (softened)
  • 1 large egg yolk
  • 1/4 cup white wine (or vinegar)
  • Oil for frying (vegetable or canola)
  • For the Ricotta Filling:
  • 1 cup ricotta cheese (drained)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 cup mini chocolate chips (optional)
  • For Garnish:
  • Powdered sugar (for dusting)
  • Chopped pistachios or chocolate chips (optional)

Instructions

  1. In a bowl, combine the flour, granulated sugar, cinnamon, and salt.
  2. Add the softened butter, egg yolk, and white wine (or vinegar) and mix until a dough forms.
  3. Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
  4. Roll out the rested dough to about 1/8 inch thick.
  5. Use a round cutter (about 3 inches) to cut out circles of dough.
  6. Heat oil in a deep skillet or pot to 350°F (175°C).
  7. Wrap each dough circle around a cannoli tube or cone-shaped mold, sealing the edges with a little water.
  8. Fry for 2–3 minutes, or until golden brown. Remove and drain on paper towels.
  9. In a bowl, mix the ricotta cheese, powdered sugar, vanilla extract, and cinnamon until smooth and creamy.
  10. Fold in the mini chocolate chips if using.
  11. Once the shells are cool, carefully remove them from the molds.
  12. Fill each shell with the ricotta filling using a piping bag or small spoon.
  13. Dust with powdered sugar and garnish with chopped pistachios or extra chocolate chips if desired.
  14. Serve immediately and enjoy.

  • Make sure to drain the ricotta well for the best texture.
  • Fry in small batches for even cooking.
