  1. Prep your ingredients: Start by peeling and dicing your potatoes into small cubes. Chop the Andouille sausage into bite-sized pieces, and dice the onion, celery, and bell pepper. Mince the garlic.
  2. Sauté the vegetables: In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, celery, and bell pepper, and sauté for about 5 minutes until they soften. Stir in the minced garlic and cook for another minute.
  3. Add the sausage: Incorporate the Andouille sausage into the pot and cook for about 5 minutes until it starts to brown and releases its flavors.
  4. Add the potatoes and broth: Add the diced potatoes to the pot and pour in the vegetable or beef broth. Stir well to combine.
