Delicious Cajun Potato Soup Recipe for Comforting Nights
Ingredients
- Yukon Gold or russet potatoes
- Andouille sausage
- Cajun seasoning
- Vegetable broth
- Heavy cream
- Onion
- Celery
- Bell pepper
- Garlic
- Oil
Instructions
- Prep your ingredients: Start by peeling and dicing your potatoes into small cubes. Chop the Andouille sausage into bite-sized pieces, and dice the onion, celery, and bell pepper. Mince the garlic.
- Sauté the vegetables: In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion, celery, and bell pepper, and sauté for about 5 minutes until they soften. Stir in the minced garlic and cook for another minute.
- Add the sausage: Incorporate the Andouille sausage into the pot and cook for about 5 minutes until it starts to brown and releases its flavors.
- Add the potatoes and broth: Add the diced potatoes to the pot and pour in the vegetable or beef broth. Stir well to combine.
- Season: Sprinkle in your Cajun seasoning. Start with 1 tablespoon and adjust to taste as the soup cooks. Bring the mixture to a boil.
- Simmer: Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Blend (optional): If you prefer a creamier texture, use an immersion blender to puree part of the soup. You can also transfer a few cups to a blender, puree, and return it to the pot.
- Stir in the cream: Once the potatoes are fully cooked, stir in the heavy cream. Let it heat through for about 5 minutes. Taste and adjust seasoning if needed.
- Serve: Ladle the soup into bowls and garnish with chopped green onions or parsley for a fresh touch. Enjoy with some crusty bread!
