Ingredients

  • 2 cups shredded chicken
  • 1/2 cup Buffalo sauce
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Egg roll wrappers
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, and chopped green onions. Mix until everything is well incorporated and creamy.
  2. Lay an egg roll wrapper on a clean, flat surface with one corner pointing toward you. Place about 2 tablespoons of the chicken mixture in the center of the wrapper. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly away from you to seal. Use a little water on your fingers to seal the edges if necessary.
  3. In a large skillet or deep fryer, heat about 2 inches of oil to 350°F (175°C). You can test the oil by dropping in a small piece of bread; it should sizzle immediately.
  4. Carefully add the egg rolls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they’re golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.
