- 2 cups All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1 cup Confectioners’ Sugar
- 1 teaspoon Pure Vanilla Extract
- 1/2 teaspoon Fine Sea Salt
- 1 cup Toffee Bits (Heath English Toffee Bits recommended)
Instructions
- Preheat your oven to 325°F (160°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
- In a light-colored saucepan, melt your unsalted butter over medium heat. Swirl the pan occasionally until the butter turns golden brown and smells nutty, about 5-8 minutes. Pour the browned butter into a heatproof bowl and let it cool for 10-15 minutes.
- While the butter cools, whisk together the all-purpose flour, confectioners’ sugar, granulated sugar, and fine sea salt in a medium bowl. Set aside.
- In a stand mixer or large bowl with an electric mixer, combine the slightly cooled brown butter and pure vanilla extract. Beat on medium speed for about 1 minute until well combined.
- Gradually add the dry ingredient mixture to the brown butter mixture, mixing on low speed until just combined.
- Gently fold in the toffee bits by hand until evenly distributed throughout the dough.
- Transfer the shortbread dough to the prepared baking pan and press it firmly and evenly into the pan.
- Bake for 30-35 minutes, or until the edges are lightly golden brown and the center looks set.
- Remove the pan from the oven and let it cool on a wire rack. Score the shortbread into bars or squares while still warm, then let it cool completely before lifting it out using the parchment paper sling.
