Instructions
- Preheat your oven to 425°F (220°C) and line your baking sheets with parchment paper.
- In a mixing bowl, toss sliced Honeycrisp apples with brown sugar, butter, bourbon, cinnamon, ginger, and cloves until well coated.
- On a lightly floured surface, roll out the puff pastry to about 1/4 inch thick and cut into 8 rectangles.
- Spread a layer of apricot preserves over each pastry rectangle, then layer on brie and the apple mixture.
- Brush the edges of the pastries with egg wash, fold them over, and use a fork to crimp the edges.
- Chill the assembled tarts in the refrigerator for 15 minutes.
- Bake the tarts for 15-20 minutes or until golden brown and puffed.
- Once out of the oven, sprinkle with flaky sea salt.
