- 2 tablespoons Melted Butter (can substitute vegetable oil or melted coconut oil)
- 1 teaspoon Vanilla Extract (optional)
- 1/2 cup Mini Chocolate Chips (sweet surprise)
- 1/2 cup Blueberries (adds fruity zing)
- 1 teaspoon Cinnamon (for warmth and spice)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a mini muffin pan with non-stick spray.
- Mix the dry ingredients in a large bowl: combine flour, sugar, baking powder, and salt. Stir until well blended.
- Whisk together the wet ingredients in a separate bowl: milk, egg, melted butter, and vanilla extract until smooth.
- Fold the wet ingredients into the dry mixture gently. Mix just until combined.
- Scoop the batter into the greased muffin pan, filling each cup about 2/3 full.
- Bake for 10-12 minutes until the tops are golden brown and a toothpick inserted comes out clean.
- Cool for a few minutes in the pan, then carefully remove the poppers and serve warm.
