  • 32 Lotus Biscoff cookies (8.8 ounces)
  • 1 (10- to 12-ounce) package white chocolate, finely chopped
  • 2 tablespoons Biscoff cookie butter (optional, for mixing and drizzling)

Instructions

  1. Line a baking sheet with parchment paper to prevent the truffles from sticking and for easy cleanup.
  2. Use a food processor to process the Lotus Biscoff cookies into fine crumbs to create the base of the truffle mixture.
  3. Warm 1/4 cup of Biscoff cookie butter in a microwave-safe bowl until it becomes soft and fluid. In the food processor, combine the softened cream cheese, cookie crumbs, and warmed cookie butter. Pulse until the mixture is well combined and smooth.
  4. Roll the mixture into 1-inch diameter balls using your hands and place them evenly spaced on the parchment-lined baking sheet. Chill them in the refrigerator for at least 1 hour to firm up.
