Description

An incredible apple cheddar soup recipe that is creamy, hearty, and full of flavor. This easy homemade soup combines sweet apples with sharp cheddar for a comforting dish perfect for any occasion.

Ingredients

Scale
  • 4 cups chopped apples (Granny Smith or Honeycrisp)
  • 1 medium onion, chopped
  • 2 tablespoons butter
  • 4 cups vegetable or chicken stock
  • 1 cup sharp cheddar cheese, grated
  • 1 cup heavy cream
  • 1 teaspoon thyme leaves
  • Salt and pepper to taste
  • Optional garnish: chopped chives or additional grated cheddar

Instructions

  1. In a large pot, melt butter over medium heat. Sauté chopped onion until translucent, about 5 minutes.
  2. Add chopped apples and thyme. Cook for 3-4 minutes until apples soften.
  3. Pour in stock. Bring to a boil, then reduce heat and simmer for 20 minutes until apples are cooked.
  4. Puree the soup until smooth using an immersion blender or a countertop blender.
  5. Return soup to the pot. Gradually stir in grated cheddar cheese and heavy cream until incorporated. Heat gently until cheese is melted and soup is hot.
  6. Season with salt and pepper to taste.
  7. Serve immediately, garnished with chives or extra cheese if desired.

Notes

  • Use fresh apples for the best flavor.
  • Experiment with different cheeses like Gruyere or Gouda.
  • Add a splash of lemon juice or apple cider vinegar to brighten flavors.
  • For a spicy twist, add cayenne pepper or jalapeño.
  • Add carrots or celery with the onions for more vegetables.
  • Store in an airtight container in the refrigerator for up to 3-4 days.
  • Freeze for up to 3 months. Thaw and reheat on the stovetop, adding liquid if needed.
