- 1 cup rolled oats
- 2 fresh, crisp apples (Granny Smith or Honeycrisp)
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 eggs
- 1 tsp baking soda
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
- Prepare the apples. Peel, core, and finely chop your apples. You can also grate them if you prefer a smoother texture in your cookies.
- Cream the butter and sugar. In a large bowl, beat the softened butter and brown sugar together until light and fluffy. This should take about 2-3 minutes.
- Add the eggs. Mix in one egg at a time, ensuring they’re well incorporated before adding the next.
- Incorporate the dry ingredients. In a separate bowl, whisk together the flour, oats, baking soda, cinnamon, and nutmeg. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Fold in the apples. Gently mix in the chopped or grated apples until they are evenly distributed throughout the dough.
- Shape the cookies. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each cookie as they will spread while baking.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Cool. Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
