Ingredients

  • 1 pound flank steak
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/4 cup tamari sauce
  • 3 cloves garlic
  • 1 bunch asparagus
  • 1 cup bell peppers
  • 1/4 cup balsamic vinegar
  • 1 cup beef broth
  • 2 tablespoons unsalted butter
  • 1 spray olive oil

Instructions

  1. Generously sprinkle kosher salt and black pepper over the flank steak.
  2. Place the seasoned steak into a large zip-top bag. Add tamari sauce and minced garlic, then seal the bag.
  3. Massage gently to ensure the steak is well coated. Refrigerate for at least 1 hour, or ideally overnight.
  4. Once marinated, take the steak out of the bag and discard the marinade. Lay the steak flat on a cutting board and place an equal share of asparagus and sliced bell peppers in the center.
  5. Carefully roll the steak around the vegetables and use toothpicks to secure the bundles.
  6. Set your air fryer to preheat while you prepare to cook.
  7. Arrange the steak bundles in the air fryer basket in batches and spray lightly with olive oil.
  8. Cook at 400°F for 5 minutes.
  9. After cooking, take the steak bundles out and let them rest for about 5 minutes.
  10. In a small to medium saucepan, combine balsamic vinegar, beef broth, and unsalted butter over medium heat.
  11. Whisk together until well combined. Allow the sauce to thicken.
  12. Drizzle the sauce over the steak bundles just before serving.
