- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic, zucchini, and bell pepper. Sauté for 5 minutes.
- Stir in the cherry tomatoes and red pepper flakes. Cook for another 3-4 minutes.
- Season with salt and pepper.
- Toss the cooked pasta into the skillet, mixing until well combined.
- Garnish with fresh basil and serve with Parmesan cheese on top.
Notes
Feel free to add protein like chickpeas or tofu for a heartier meal.
